Where It Started

From one Iloilo stall to a nationwide table

The story behind charcoal-grilled chicken inasal, the achuete oil that colors every plate, and the unli rice policy that made the brand famous.

2003: One stall in Iloilo City

Mang Inasal opened its first branch in Iloilo City in 2003, built around a single idea: charcoal-grilled chicken inasal, marinated in lemongrass, garlic, and vinegar, served with rice that never runs out. The concept borrowed from Ilonggo roadside inasal stalls, small, smoky, and built around a charcoal grill visible from the street, and packaged it into a fast-food format that could scale nationwide without losing the char.

Founder Edgar "Injap" Sia II built the brand on three ideas that stuck: cook the chicken the same way roadside vendors in Iloilo always had, keep the price low enough for a daily meal, and never charge extra for a second (or third) cup of rice.

The achuete oil, explained

The signature orange-gold color of Mang Inasal's Java rice comes from achuete oil, pressed from annatto seeds. It's earthy, mild, and slightly peppery on its own, poured over garlic rice, it turns the grain a deep golden-orange and shifts the flavor into something distinctly Filipino. The vinegar dip goes on the chicken itself, cutting through the smoky char from the charcoal grill.

2010: Joining Jollibee Foods Corporation

In 2010, Mang Inasal was acquired by Jollibee Foods Corporation (JFC), the parent company behind Jollibee, Chowking, and Greenwich. The acquisition gave the brand the supply chain and real estate backing to expand rapidly while keeping its charcoal-grill format intact at branch level, each store still grills to order rather than relying on pre-cooked stock.

Today: 750+ branches nationwide

Mang Inasal now operates in hundreds of locations across Luzon, Visayas, and Mindanao, with its deepest branch density still concentrated in the Visayas region where it began. The menu has grown well beyond the original Chicken Inasal, Sulitbowls, Sisig Palabok, and breakfast combos have all been added over the years, but the unli rice policy for dine-in Chicken Inasal orders remains the brand's defining feature. See the current menu and prices or find your nearest branch on the locations page.

Mang Inasal is one of the only major Filipino fast-food chains offering unlimited rice with dine-in chicken meals, a policy in place since the very first branch opened in 2003.
